5 Tips for Smoking Meat

1. Go Low and Slow (most of the time)
2. Don't Peek. Lifting the lid lets out smoke and heat.
3. Don't Overdo it. Too much smoke will dominate the flavor. Only smoke for half of the cooking time on longer recipes.
4. White Smoke is good, black smoke is bad.
5. Keep the air moving.
