How to create your own smoked meat and vegetables.

Smoking food at home is SO much fun! And so unbelievably easy! I can almost guarantee that you have all that you need to do this in your kitchen! Its super easy, and you wouldn't believe that flavour this simple yet unusual style of cooking can create!

You will need
1 heavy based frying pan or a wok
2 big sheets of tin foil, to line the frying pan
1 cup of uncooked rice
3-4 teabags. Tear the tea bags open and use only the tea leaves on the inside.
Your Imagination...Use whatever you have to create some more flavour, just always ensure you use dry ingredients. (You can even very the type or flavour of tea you use)
Some examples: whole garlic cloves, lemon, orange or lime rind, woody herbs such as rosemary or thyme, a whole chille. The list is endless. Just consider what it is you are smoking. For example, fish and lemon are a classic combination, so use some lemon. Likewise, duck and orange. I could go on forever!!
Place the frying pan on a high heat and wait untill you begin to see some smoke bellowing. YOU ARE NOW IN BUSINESS!!
Get a wire rack or grill and pivot it on your frying pan.
Onto this, you can place whatever it is you are smoking. Cover the meat or vegetables securely with another sheet of tin foil to ensure the smoke is trapped in. The heat from the smoke will cook the food whilst imparting a wonderful flavour.,
As a guideling, fish can be smoked from raw. It will take up to 10 minutes for a thin fish, perhaps 12 - 15 for a thicker cut eg salmon fillet
With meat, firstly seal the meat by frying for a few minutes on each side, and simply finish off in the 'smoker'
